Cream Cheese Marbled Gooey Butter Cake Bars
This dessert bar is a direct inspiration from my Great Aunt Kathy’s butter cake, which I only recently learned is actually a classic St. Louis butter cake. Growing up, it was simply our family recipe. I loved helping my mom make it: pressing the yellow‑cake‑mix crust into the pan and spreading the rich cream‑cheese topping over the top. It was requested for every gathering, always served cold so the squares held their shape and kept that signature gooey bite.
When I made it for my husband for the first time, he was shocked by how intensely rich it was. This version is my attempt to keep everything I love about Aunt Kathy’s cake while softening the sweetness and adding more texture. The added batter layer brings moisture and lift, preserving the gooey top but giving the bar a custard‑like softness. A touch of lemon zest brightens the richness and adds aromatic depth, and a final dusting of powdered sugar makes it feel special enough for any occasion.
These Marbled St. Louis Butter Cake Bars take the beloved gooey butter cake tradition and give it a fresh, scratch‑made twist. A buttery pressed crust forms the base, topped with a light custard‑style batter and ribbons of sweet cream‑cheese filling marbled throughout. The result is a bar that’s gooey in the center, tender on top, and beautifully layered. Familiar to anyone who grew up with St. Louis butter cake, but elevated with a homemade crust, balanced sweetness, and bright lemon zest.

Cream Cheese Marbled Gooey Butter Cake Bars
Equipment
- 1 9×13 Casserole Dish
- 1 Stand Mixer w/ Paddle Attachment | Hand mix if you do not have a stand mixer.
Ingredients
Crust Ingredients:
- 2 ¼ cups cake flour 260g
- 1 cup granulated sugar 212g
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp fine salt
- ¼ cup dry milk powder 36g
- 1 stick butter partially melted
- 1 large egg
Batter:
- 2 large eggs
- 1 cup white granulated sugar 212g
- 1 tbsp neutral oil Avocado or vegetable oil
- ½ tsp vanilla
- 1 dash salt
- 1 cup all-purpose flour 127g
- ½ cup whole milk 130g
Cream Cheese Mixture:
- 4 oz cream cheese
- ½ lb powdered sugar
- ½ egg 1.5 tbsp scrambled egg
Topping:
- Powdered Sugar
- Lemon Zest from 2 lemons
Instructions
- Preheat the oven to 350°F.
- Butter a 13×9‑inch baking dish and set aside.
Crust
- In a large bowl, whisk together the cake flour, granulated sugar, baking powder, baking soda, salt, and dry milk powder until evenly combined.
- Add the partially melted butter and egg. Beat on medium speed for 2–3 minutes, or until the mixture forms soft, clumping crumbs. It should look like damp sand that holds together when pressed.
- Transfer the crumb mixture to the prepared baking dish. Using your hands or the flat bottom of a measuring cup, press the crust firmly and evenly across the bottom of the pan, making sure it reaches all edges.
Batter
- In a separate bowl, whisk the eggs, granulated sugar, oil, vanilla, and salt on low speed until just combined.
- Add the flour and milk in alternating additions (flour → milk → flour → milk), whisking gently after each addition. Mix only until the batter is smooth. Avoid over‑mixing to keep the texture tender.
Cream Cheese Mixture
- In a small bowl, beat the cream cheese until completely smooth and softened.
- Add the powdered sugar and egg, mixing until the mixture is thick, glossy, and uniform.
Assembly
- Using a rubber spatula, spread the cream‑cheese mixture up the sides of its bowl to create a “well” in the center.
- Pour the batter into the well. Gently fold the cream‑cheese mixture into the batter, creating long ribbons and streaks. Do not fully combine, the goal is a marbled pattern with visible cream‑cheese swirls.
- Pour the marbled mixture over the pressed crust. Spread evenly to the edges so it bakes uniformly.
Bake
- Bake for about 45 minutes, or until the top is lightly golden, the center is set but still slightly soft, and a gentle jiggle remains.
- Cool completely, then refrigerate until fully chilled. This helps the bars slice cleanly and preserves the gooey texture.
- Right before serving, dust generously with powdered sugar and sprinkle with fresh lemon zest for brightness and aroma.
