Rustic Sausage & Tomato Sauce
This meat sauce builds deep flavor from simple ingredients by leaning hard into browning and caramelization. Italian sausage is cooked until deeply crisp and dark, creating a rich, savory base. Onions, garlic, and red pepper flakes add warmth and aromatics, while tomato paste is toasted for extra depth. A mix of whole peeled and crushed tomatoes gives the sauce both body and rustic texture. Everything simmers together into a bold, hearty sauce perfect for pasta, baked dishes, or weeknight meals.

Rustic Sausage & Tomato Sauce
Equipment
- 1 Large Pot
Ingredients
- 2 tbsp olive oil
- 1 lb ground Italian sausage
- 1 large yellow onion finely chopped
- 5 cloves garlic minced
- 1 tsp red pepper flakes
- 2 tsp oregano
- 1 tsp fennel seed
- 1 tsp aleppo
- 2 tbsp tomato paste
- 1-28 oz can whole peeled tomatoes
- 1-28 oz can crushed tomatoes
- salt and pepper to taste
Instructions
- Heat a large pot over medium‑high heat with olive oil. Add the sausage and brown it, like Brown Brown. You want it super dark and crispy around the edges. Don’t stir often; let that flavor develop.
- Add the onions, fennel seeds, aleppo, oregano, and red pepper flakes and cook until the onions are translucent and starting to take on a little color.
- Add the garlic and cook just until fragrant.
- Stir in the tomato paste and cook for 1–2 minutes to toast it.
- Add both cans of tomatoes, hand‑crushing the whole tomatoes as they go in. Bring to a simmer and season with salt and pepper to taste. Simmer for at least 20 min partially covered for flavors to marry.
